Ingredients

  • 4 chicken breasts

  • 2 cups of fresh chives, finely chopped

  • 2 tablespoons of olive oil

Preheat the oven to 200°C.

In a small bowl, beat the egg and in another bowl mix the flour with the breadcrumbs.

Dip the chicken breasts first in the egg mixture and then in the flour and breadcrumb mixture.

Heat the olive oil in a skillet and sear the chicken breasts until golden brown and cooked through, about 10 minutes per side.

Arrange the chicken breasts on a baking sheet and sprinkle the chopped fresh chives on top.

Bake for another 10 minutes until fully cooked.

Preheat the oven to 180°C.

In a bowl, mix the chopped chives, breadcrumbs, eggs, orange juice, salt and pepper.
